Not an expert and have a question.

I decided to check the tubers that I dug and saved last fall and found them in fairly decent shape! One exception was the very large clump of tubers that I had been too concerned to separate. I thought it would be easier in the spring when they were more dried out. It isn't!! They are so intertwined that it is very difficult to pull them apart and there are even a few sprouts starting. Okay my question is....If I accidentally knock the sprouts off will the tubers still be okay and send more sprouts when they are finally planted.
