My builder uses Houzz Pro to plan the timeline and give detailed estimates and daily updates with photos of progress, and provide invoices at pre-agreed key points in the build. This made the whole experience much more efficient and stress-free.

      No rule but don't make it too tight. I actually added a towel bar on the right side of the vanity so I didn't have to put it on the papered wall or look at a towel. Keep in mind you want to be able to clean on both sides. I have about 7 inches on each side of mine.
