The 1st & 3rd images each have a leaf affected by mites you mentioned. Probably eriophyid mites as mentioned in the link you added. Even so, eriophyids may create unsightly leaves but don't kill plants.

Where is that mailorder place? I couldn't find anything on their website. If from an area where eriophyids are endemic on persimmons, they are a poor choice for obtaining such trees.

I agree with the comments listed in that other link: Never should have been shipped in that condition; request refund or replacement with healthy trees.

They came from Monticello, FL. Since a lot of persimmons seem to be grown in the south, I'm guessing persimmon eriophyids would probably be endemic there, right?

I'd been holding out hope that the trees would spring back, but that doesn't seem to be happening. They do have a replacement policy, but I don't really want more mite infested trees. :( Wish me luck in getting a refund!

It's often wise to obtain fruit trees from local sources rather than ordering from across the country. Likely those figs require much more heat than the NW climate allows. To grow figs here, check at your nearby large garden center. (You won't find the same kinds you ordered from FL, but they will thrive in your climate.) Unfortunately, by now, the pickings may be slim. Suggest you do some preliminary shopping by phone.
