What material is used as a backsplash? Is there any other than white paint? If paint, what color and type to hold up to kitchen use?

    There is no back-splash, In such cases, a good silicone seal is required between worktop and wall. the paint needs to be a good quality washable acrylic paint or even an oiled based gloss paint used for timber around the sink area works. Another alternative is a clear glass back-splash again with silicone (clear) sealant to worktop.
