They'll be ok for sliced pickles, but whole pickles tend to get hollow if the cukes are held.

Agree with lacey that for slices they will be fine. Even better if you use Pickle Crisp.

But if you wanted to make whole pickles then the old rule of "picked and pickled within 24 hours" applies for best results. They way most get around that problem is by planting several plants so that you have enough ready to go all at the same time. With only a couple of plants you'll never have enough.

Some report they can extend their quality for a day or two by storing them in heavily iced water (like in a cooler) but any longer and they become watery in flavor.

I do plan on slicing them. So should I slice and store, or store whole til I get ready to pickle, then slice?

Store whole, then slice when ready to do your pickling.

Yeah, never slice until right as ready to do. Slicing only speeds up the deterioration.
