I dont know about typical, but it was not unheard of to have dthe fancier wood in the living room/dining room area. If you are painting it you could just do it in poplar (cheap paintable wood). Just get the proportions & profiles the same.

I agree. Here in Chicago, our historic bungalows have maple in the kitchen and oak everywhere else. Often, the kitchen is painted and the other trim is stained. I think you can make it work.

I think that would depend on your tastes. As was mentioned earlier the kitchen was often painted since the wood may not have an interesting grain or was considered to be "low quality"

Note that new wood is going to accept stain differently than old wood, so if you are trying to get an exact match it may be challenging. If you have a good Sherwin Williams (not sure if all of them will do it), they can tint their stain, but they will need a finished sample of your existing wood and a piece of the new raw wood to test. Make sure to tell them to take their time and adjust for any golden tones your finish (poly/laquer) will provide.

Poplar has a tendency to have a green undertone and is better for painting (although a better grade may take stain well enough)
