Pickling them would be the most common I guess. Or you could grind them into dill or sweet relish but it would likely be dry, add them to a chutney recipe? I'd probably just make one of the sweet gherkin pickle recipes with them.

Lucky you! I tried to grow some last year and not a single one germinated, so I didn't try again. I was told they are supposed to taste like they are already pickled?

I grew these cute things for several years. Pickling them in dill, or B&B, or half sours, or sweet made them inedible, same with trying to use them in relish. They are just not suited for pickling or canning.
