What are you going to use these carrots for? I would have thought you could just rinse the ammonia off. But I am also curious as to why you soak them for 2 hours in anything, even plain water.

Eh. Just me being a little paranoid about germs (vinegar soak is supposed to be a decent way of cleaning produce). I usually do more like 30 minutes, but I left them while I ran errands. I was just going to eat them. I have a carrot salad I like to make. Maybe I'll just peel them really well after a heavy rinse?

Like floral I don't see the need for soaking in anything but water for a few minutes and then scrubbing them well. But at least vinegar is safe to consume, ammonia is not. I suppose you could peel one and taste a bite to see how deep the ammonia penetrated if you want. If there is no ammonia taste then at the least, I'd cook them before eating.

Ultimately it is up to you but personally if I had soaked some for a couple of hours in ammonia I'd just toss them.

Don't they lose flavour with all that soaking? Wash and scrub is all I do. And I do it immediately before cooking or serving. I don't even peel until late in the winter when they're getting a bit elderly. You really don't need to go through that rigmarole.
