The only advantage to a gas oven I have found for bread is that I can toss ice cubes on the floor of the oven to make steam. But you could also heat a pan and toss them in there in an electric oven. I also like the open flame gas broiler. But I think the oven is a close call and you shouldn't worry about it. If you like a single range, I don't think there is any huge advantage to electric for baking. Oh, when I make cookies I always need to use a double sheet in the gas oven.

I agree that the gas broiler is a MAJOR plus. But I doubt I'd ever need 2 of them, so I'm still stuck with the dilemma of one big unit or two separate. I think I've nixed the duel-fuel double range. I do think that I want at least one gas convection oven, so now we're down to 6-burner gas stove/oven + steam convection wall unit OR 6-burner with double convection gas ovens....Or maybe I just negotiate with hubs for an additional steam oven (but 3 ovens REALLY seems excessive (right?!)

Unless you are running a catering service out of your home, yes! Personally I'd only want a single range and keep the clutter to a minimum. But maybe you entertain on a grand scale?

I used to throw a lot of parties, so I know that 2 ovens definitely isn't overkill. 3 however.... :)

I have an all gas range 6 burner and a double electric wall oven there are a few things I like better done in gas ovens bread is definately one , pizza turkey or roast chicken . All my ovens are convection, for me it is the perfect answer. The exhaust system for anything wider than 36” costs way too much and is so noisy it is like working in a commercial kitchen.
