We didn't like it, but probably should have used a better quality wine/vinegar. Also it seemed that there were too many dried herbs--the flavor got pretty strong. If I tried it again, I would buy a good bottle of wine and cut the amount of oregano/basil. My brother-in-law loved it, so I gifted all of the jars to him. It was a pretty simple recipe though, so it's worth trying. Not sure about using a larger jar.

Does the book recommand 20 or 10 minutes of processing? I got a recipe of someone who says they took it out of Ball but gives 10 minutes of time?

20 minutes of processing, then an additional 5 with lid and heat off.
