Well I'll have to look up the recipe to double check but just because the brine is safe for the ingredients in the tested recipe, it isn't necessarily safe for all those other vegetables.

That is what is called generalizing from one recipe to another and isn't recommended as it often isn't safe. ;-)

It sounds as though what you are really making is Mixed Vegetable Pickles (see NCHFP) and while there are instructions for B&B cuke pickles in quarts at NCHFP there are no instructions available for quarts of mixed vegetables, only pints. And the Mixed Vegetable Pickles call for more vinegar than the 3 cups in the Ball Blue Book (4-5 cups and no added water). Plus the peppers will all have to be slit or halved and the chunks of kohlrabi and cauliflower cut in 1" cubes for heat penetration.

If you want to stick the BBB then look at the recipes for End-of-the-Garden Pickles, Mixed Pickles, and Hot Pickle Mix for instructions, ok?

Processing time remains 10 mins for quarts.
