Capsaicin temp range?

I'm asking about hot peppers here, and capsaicin temp range. Not the Scoville units heat. But the actual temp range that the volatile oil is good to.

Seems like I can burble a salsa, or pack hot peppers into pickles and such, and not matter what I crank up the sauce heat to, or after pickling.. heat don't seem to kill capsaicin. I freeze hot peppers, and that don't seem to do anything.

I don't necessarily want to kill the heat.. but considering how well the heat survives, I wondered about it.. but ugh, my google searches for "heat/temp" always result in Scoville scales.
