You could do a desk with shelves above for books. Or, you can use that space as another refrigerator. Two refrigerators in kitchen... You can use one for specific items and another for "everyday" items. Kinda like people who have a "garage" refrigerator. You'll have two "kitchen refrigerators" without having to go to the garage.

You have a dated over the range microwave. The best LOOKING, most functional result would be a custom stained to match cabinet enclosure, and the purchase of a single oven and a built in microwave. Both In stainless to match a new fridge, range, and presumably a stainless dishwasher. Also a venting hood to replace cabinet/microwave above the range. Personally, I'd paint all the cabinetry to a soft white as well. : )
