I just want to say, I appreciate the illustrations! Before making a decision though, what does the rest of the house look like? As in, is it more traditional or modern?

So I hope you are removing the backsplash that is there now . IMO the fancy piece of tiling behind the stove is a very dated look I would just do the herringbone everywhere.

I generally don't like decorative tile behind the stove, but where it adds color and a playful element, it can really bring the kitchen to life. You didn't show a picture of the actual tile that you're considering there, but it looks like you intend blue and white with a flowery feel, and I like that very much.

I agree that adding a decorative element behind the stove is too much. I'd do the same tile throughout the kitchen. The space under the counters is not vast nor is the kitchen. I'm afraid it would look busy. Go with a simple solid tile in long subway, chevron or herringbone.
