Interesting idea! I have a 1952 O'Keefe and Merritt and just waiting for my next remodel to use it. I think it depends on if you are a purist or not. It will change the look of the Chambers stove. If it were me I would keep the Chambers as is and do the small induction cooktop (this is my plan too, keeping the gas stove as the star and the induction less obtrusive!). I understand space may be an issue. Let us know the outcome.

Start with the size of the griddle opening to determine if this is a feasible route. Removing the griddle and things in the interior that support it are probably doable if the opening doesn't need to be enlarged for a 2 burner induction module. This may not be approved by an inspector, so if the size numbers work, I'd probably put the 220 outlet in the cabinet "to future proof someone else wanting electric instead" and then put a scrap piece of stone in the center as a "trivet". After inspection, then the induction hob could be dropped in and connected to the electrical.

It's probably easier to find one of these that the griddle doesn't work too!

I would be happy either way, keeping the griddle.
