My dead mint plant came back, but he has changed.

I got this mint plant at a yard sale (first picture). It was covered in spots, so I didn’t know if I should taste it. It smelled great, though, and the leaves had jagged edges and came to a neat point.

It died, and with great hope I began to water it again. The second picture is what it looks like today. It has a VERY weak mint taste and the shape of the leaves has changed dramatically.

Does anyone recognize what’s growing in the before and after pictures? What did I do? I feel like the plant has undergone some sort of Darwinian experience and though the fittest plant survived, it’s not necessarily the tastiest.
