Usually we just roast ours, carve it up and use hot pack to fill the jars with broth - turkey broth if you boil it like some do or chicken broth if roasted. Basically it's just the hot pack instructions for chicken at NCHFP. A couple of times last year we smoked the bird with mesquite rather than roasting and really liked it. But it is more time consuming. Never tried the steam method and don't like the 'with bone' raw pack.
