L. Ziedrich pickled asparagus

I made the pickled asparagus from The Joy Of Pickling by Linda Ziedrich last year and loved the results. I want to include this in gift baskets for Christmas.

She offers two options for processing, 10 minute boiling water bath and 30 minute pasteurization at 180-185 F.

I was thinking the pasteurization might yield a nicer texture, and I do I have a thermometer that I trust.

But what do you think? Is pasteurization adequate?

The recipe call for equal parts water and wine vinegar, though I substituted apple cider vinegar last year when I boiling water bathed it. (No other substitutes made.)
