There are some great custom solutions for corner situations.

To answer your question, "does anyone just not use the corner and accept the wasted space?" because in a kitchen storage space is usually at a premium and a corner space is quite a lot of space that, if not used, is really a pity. However, you are not obliged to use it if you don't want/need it.
