Copper is a living finish which means it can change with use. Acidic foods can lighten the copper, while air and water, allowing them to air dry will let them darken back to the dark patina naturally. The dark chocolate coloring is pretty dark and without the oxidation where it does get wet, it should not get noticeable darker.
