is this normal?

Hi we hired a very reputable company to renovate our 47 year old home kitchen and bathroon....down to stud.

Finished 3 months ago and we are finding cracks in cabinet to ceiling joints, tile to ceiling joints.

Is this normal? How is it fixed?

Caulk the crack with 70% pliable when cured caulk and paint or just call the reputable company and have them come out. If they truly are reputable they will stand behind their work.

Is this happening because they installed it wrong or not well? or is it normal?

Depends. Ask them why it's happening. Weather. Old house / new materials. Materials weren't acclimated to your home humidity and temp prior to install. Poor installation. Etc. . .

It’s winter. You always get gaps in winter because wood shrinks from the low humidity. It will close back up come June.

I second Sophie, dry and cooler air causes the wood to constrict. When summer rolls around it will expand. Using flexible caulk will accommodate the expansion and contraction.
