I can't speak to your question on grout removal, but grout does change color as it dries, so the situation may not be as bad as you fear. If you hadn't said the wrong color was used, I would have thought the look was intentional -- and very nice.

I don’t care for the gray ground in this situation. The contractor made the mistake So he is the one that should fix so he is the one that should fix it.

I think the gray grout looks great with your countertops.

I realize it’s not what you wanted, but I think this grout looks great - you actually see the pattern in the tiles, and it works with the counters. I would love this!

You haven’t said what color grout you wanted ......In any case I think the gorgeous counters deserve more than the basic backsplash you have chosen...

I'd call it a "lucky accident" - it's perfect as is....really. It will lighten up a tad when it dries completely. Stunning choices AND your tile guy set them beautifully.

Gorgeous with the grey grout! White would be too plain, and the grout is much easier to clean behind the range than white grout there. It's perfect. I wouldn't touch it!!!
