What climate are you living in? I am further north and I love having a covered kitchen area so that when it is raining I can still grill outside. Some stones don’t hold up to the freeze thaw cycle so that should be an issue to discuss with your fabricator. One way to reduce cost of stone is to go with remnant stone or the left overs from other projects. Another option is to use sealed concrete counters or to go with a teak or ipe counter. My outdoor kitchen is near my kitchen. I think if you want more ideas you need to post a photo of the proposed space in relation to your house.

You're packing a LOT of function into that kitchen! My advice is to hire a designer who's really good at outdoor kitchen design. Because we're outdoor cabinetry dealers we design a lot of kitchens and the difference between a well-designed one vs sticking stuff where it looks like it should fit is huge.

It is not imperative that the sink is placed to face the guests since in my experience you usually don’t use it all that much outdoors, I think the grill is more important to face guests so one with a hood instead of a lid is nice. As for the countertops I like slate but that of course depends on the rest of the space.I find my outdoor kitchen just works different than my indoor one, don’t know why .Maybe because my husband does a lot of BBQ as opposed to grilling and I do the grilling
