The best option would be removing the soffit, but that is probably not in the budget. There are LED's tubes that will fit into old flourescent fixtures. You would have to research that. Replacing with LED fixtures, be sure you have a warmer Kelvan rating and at least 5 of them.

I would do some research on my own to learn what is available to you in your area before committing to a solution. Lighting is very important! You want to take your time and do it right the first time.

Thanks for your input.! You're right, taking down the soffit will be too expensive. We were intending to replace the fluorescent bulbs with cans, and repairing the drywall around the cans. I plan on using led lights with kelvan ratings of 2700-3000. Will this work? I'm just confused as to how many can lights to purchase, and where to place them in relation to the sinks.

I hope one of our lighting experts chime in, as I am NO expert. With that said, I do think that one light per side won't be enough. If for no other reason, it would provide light that was too focused. I find bathroom lighting is better, if the lighting is diffused.

You will probably do better with a 4" recessed light. You can purchase those LED all in one at the usual box stores. I would do at least 5-6. Two over each vanity and the center counter.
