I agree, it looks fine to me. In fact mine usually has more fat than that after pressure canning it. I usually let mine sit overnight in the refrigerator so that I can remove the fat after it solidifies, but even then I can't get it all.

Actually, yours is prettier than mine, because I don't strain it, so there's always that bit of sediment at the bottom of my jars. it must be the day for it, as I have beef broth in the roaster now, it'll simmer all night and get canned tomorrow evening.

It's sure easier to skim the fat if it sits overnight, isn't it? There's still no way to get it all, though. I used to strain the broth through cheesecloth, but finally just quit because the sediment doesn't really bother me. Yours is prettier, though.
