You have to stratisfy, but I doubt the Fuyu will survive in zone 5. I have a fuyu in zone 7 that does well. Here is a photo of my tree and some of my harvest.

Fuyu don't need stratifying or scarification. I've got a 4 fuyu seedlings (1-2month) after eating and planting. That is 100% germination (they're 4-5 inches tall). Mine are from my "giant fuyu". Since most commercial growers don't have mixed varieties in proximity (with Fuyus not needing polinators), Fuyu seeds commercially are normally fuyu (vice any hybrid to another).

I've never found any species (or sub species) differential scientifically documented amongst the fuyu (giant or regular).

I agree with Charlie that zone 5 is not likely with any asian persimmon - unless protected - which would likely need a huge heated greenhouse with lots of trimming to keep sized. American persimmon and Hybrid Kaki x Virginiana (often referred to as Russian persimmons) would do fine. Keep in mind, you'd need to protect them for the first year from the zone 5 winters to let them really settle in.
