Range, Rangetop, ovens... Help choosing...

We are building a new home and beginning the appliance search. For now, Lets just focus on the cooking...

DW (primary cook, cooks a lot and loves it) would like 6 burners (would like a griddle too, but not a necessity). She's just not sure on anything else :)We are coming from a standard 30" gas range and a Breville toaster oven, so anything we do will be a massive upgrade.

We are leaning towards propane over induction right now. Considering Wolf, Blue Star, Thermadore, and any others you think we should look at.

Kitchen layout is flexible in configuration. we can do up to 48" for the cook top area- cannot really go to 60".

We can do:

1) 48" range top. 6 burners and 12" griddle, plus 2, 30" wall ovens mounted below the counter top to the right of the range top (or in the island across the aisle).

2) 48" range. 6 burners and 12" griddle. This range has double ovens, but one is quite small. Is it too small to be useful?

3) 36" range 6 burners. extra 30" wall oven under the counter to the right (or in the island across the aisle). The 36" range has a larger than usual oven. Having never had one, are they a problem because they are too big? too long to heat up, etc??

4) 36" range top 6 burners. 2, 30" wall ovens under the counter to the right of the range top (or in the island across the aisle).

Does anyone have some guidance for us? There really aren't any higher end appliance stores nearby to ask for help. Is there something we should consider but haven't? Do any of the above configurations stand out as winners or losers?

    If you go with #3, take a look at the BlueStar 36" Platinum. It comes with the modular grill & griddle. You can keep it 6 burners, or stick with the griddle or grill in place if you end up using that heavily.

    I just rebuilt the burners on my 36" rangetop, but if i had to replace, it would nave been with the 36" Platinum. If I did a kitchen rebuild, I would be tempted to go 48" BS range top with 12" grill or Platinum for the flexibility and dual stacked electric 30" convection ovens.

    Be aware that add on griddle plates over burners are not temperature controlled. The built in griddles usually are.

    Do you really need 2 full size ovens? Have you considered a combination steam oven? Are you going to have a microwave?

    Is there a reason why you would place wall ovens undercounter? To me this negates the benefit of wall ovens. Why not just get a range?

    Whatever combination (wall vs. range), go dual fuel. That's our next upgrade. I love the gas range for the cooktop but hate it for the oven. The oven has never cooked as well as our prior electric range in our prior house. My recommendation would be gas top and electric convection oven. Can't recommend a brand since I am researching that, too.

    To answer some questions...

    Yes we will have a microwave. Planning on a drawer microwave I think.

    All ovens will be under the counter because we have no upper cabinetry planned for the kitchen. So, if we want double ovens, it could be a range and wall oven, or Range top and two ovens.

    We are just learning about combi-steam ovens. Having never used one, DW is trying to figure out what they do and the benefit. So, yes, we are thinking about one as a second oven instead.

    Steam ovens are awesome. Unless, for some reason, you absolutely need 2 full size ovens you should get one.

    Imo get

    36" range + wall steam oven (suggest Miele) + drawer MW or speed oven

    Or

    Thermador steam range + drawer MW or speed oven

    The second setup is what I have (steam range + speed oven). It's excellent, but in a perfect world a miele wall steam oven and 36" range with a speed oven would have been a little better.
