brick back splash

What are folk's opinions on back splash? I am starting a complete kitchen renovation in an 1866 farmhouse in upstate NY. I will be doing a brick backsplash and can not decide between going up to the range hood vent (chimney style) or going to the ceiling. This would be the only space the back splash would reach the ceiling as the cabinets go the ceiling. Obviously I would paint behind the range hood vent if I decided not to go to the ceiling. The cost is double if I go to the ceiling. My cabinets are quarter sawn mission style in toffee color with a black antique granite counter, stainless range and copper sink.. The cabinets next to the range hood vent have waved glass as a front panel as oppose to wood. Anybody's feed back is appreciated. I do NOT have pictures as the project is in the final design phase. Will need to make a decision pretty quick.

Thanks for your input
