Kitchen renovation help!

I am on the planning stages of remodeling my kitchen. I like the layout but not the materials and I do not like the overall builder grade dated look of the kitchen.

I have about 20 cabinets to replace. I do not need to replace the appliances as they are all SS except the microwave, which right now sits on the countertop but I want to put on a shelf.

Some of the cabinets have water damage (under the sink and from a top window that once leak) . My current boxes are not all wood and the bottom of this cabinet inside has warped. I also dislike the floor tile, countertops and the backsplash drives me crazy.

I have a black dog and I am considering a concrete looking 12x24" gray tile, but also have the whitish version of the same tile which I am also considering. Not sure if opting for a herringbone floor pattern vs a linear patter. My kitchen is not square, it has an angle in a wall and the cooking island and sink cabinet are at an angle and I think the linear pattern may look a bit weird and the herringbone may look better.

I would like white shaker doors with full overlay kitchen with the island in a darker color and a subway tile backsplash. I want tons of drawers.

On the countertop I would like a granite, quartz or quartzite in a white/black tone

I am considering IKEA cabinet boxes, as I love their drawer functionality, and purchasing the doors and drawer fronts elsewhere.

I would like to know:

-From people who have lived with IKEA kitchen (the boxes) are they really durable? My current boxes are not wood and have lasted 20 yrs. I could save a ton on IKEA cabinet boxes and be able to do the upgrades on the floor + granite and better quality doors and drawer fronts.

I am enclosing a few pics.

12x24" tiles along with the living room floor and the current kitchen floor. Gray or white?

Herringbone pattern (?), with gray tile. Will it look ok (This is not my kitchen kitchen pictured below)

Sink (vs a SS farmhouse sink?)

Thanks for all the input!!
