should I top my cherries?

So, as usual, my cherries have reached the top of their 7-foot trellis. I usually just let them go, wherin they fall over and drape themselves over the top half of the trellis. I look at this as an opportunity for more fruit, but also would produce thick shade for the top part of the plant. Should I top them, to encourage more uniform encourage side growth? I've never done that, but I'm wondering if it might make for more manageable plants.
