Pro's help me pick kitchen faucet

installing a new kitchen. White Dove Perimeter shaker cabinets, island in Lamproom Grey. The kitchen I've copied sans the open shelving and my cabinets go to ceiling are shown below. and here's my countertop quartzite. Okay so as you can see the countertop is very busy. Haven't pulled trigger on templating this but will probably not use the left side on my island and also that snot image in middle? I have 2 slabs so yeah that's not being used either. Anyway. The slab has light greys (the darkest shade matches perfectly with F & B Lamproom grey, hence the island color) and the other colors are lesser versions of that, it can read in certain light as a pale green, but owl gray did nothing for me, and all agreed lamproom gray was spot on) there's white running thru it that looks great with white dove AND decorator white but decided to go with White Dove as it's the trim EVERYWHERE in my house. I'd like to use Polished Nickel. But Polished Chrome looks nice too. So here's my two questions: 1. Polished Nickel or Polished Chrome? - I understand that it's my choice but would love some feedback. I'm leaning towards Polished Nickel (kinda love that it's so rich looking, and yes I know it has a yellow tint, note that I'd like to use the Polished Nickel Visual Comfort Etoile Sconce to flank either side of my bump out kitchen area which is just opposite this area of the room. I am not using any pendants or light fixtures over anything in this kitchen as I have a view of ocean out the windows and want a clean fresh clear view. Plenty of recessed over everything! 2. Bridge Faucet with a side spray or single hole faucet with a side spray? For the record my cabinet maker leans heavily toward the two hole Bridge Faucet in a tap room look - think Artisan by Perrin & Rowe or Chesterfield by Newport Brass. Kohler has one that's tapish but its a 3 hole Bridge and he said I'd be happier with a 2 hole bridge. Also I like levers as opposed to cross handles. And I don't think I'll mind having to mix the water to get the right temperature. He says the single faucet might be more appropriate in a bar area. 3. Anyone want to weigh in on the Perrin & Rowe Living Finish. My cabinet maker says he's used it in his two homes and the newer one is obviously shinier than his 8 yr old one, but he said 'I kinda like the authenticity of the living finish'. 4. Newport Brass Polished Nickel has a PVD coating over it so it'll look as shiny on day one as it will 10 years from now. Kinda enticing....
