Unless you have a true old farmhouse and shiplap is original to the walls, then no no no to the shiplap. Neither a great material for backsplashes and very overdone where it does not suit.

There are just sooooo many tile options (looks, textures, materials, patterns), or even just option of carrying counter material up to make a full backsplash, to rule out all other options to shiplap IMO.

I would suggest you consider a wood-look tile backsplash.

How would you clean rough cut wood? How sanitary do you think this would be in a matter of a few months?

If you love shiplap, use it. We are using shiplap (in our farmhouse in the country), but have a few inches of quartz coming up the back to act as a backsplash, and because the walls and counters are all light, it doesn't look like a stripe. Like this photo:

Thanks for the comments, so probably a no on the shiplap (my husband will be relieved lol). I'm just starting to plan my reno. I want something timeless and warm but simple. I'm kinda over subway tile, I think that's been overdone too. Right now leaning toward white cabinets with marble look quartz counters and copper accents. It's a small kitchen.
