It is sort of a "rock and a hard place" choice. On one hand the damaged leaves aren't doing the plant any good but on the other hand pruning them right now only adds additional stress to the plant that is already stressed. And without seeing the plant I have no idea how much actual damage there is - minimal or max - so how much pruning you would have to do is unknown.

I tend to let the plant do its own thing rather than add to its difficulties. It will shed the damaged leaves all on its own as it hopefully begins to recuperate. How much it will bounce back all depends on the type and degree of herbicide exposure. I'd focus on eliminating any future possibility of exposure to herbicides.

But if the damage is minimal perhaps consider removing only the most severe damage and leave the rest alone - a sort of compromise position. ;-)

I don't think it'll matter much. Though I guess if you remove leaves that are damaged and can't benefit the plant as a whole, removing them could allow those nutrients to help make more. Why won't those plants produce any more leaves? Those are indeterminates. They'll keep growing until a freeze kills the plant. Whether you prune or don't prune, the plant is going to make more leaves.

I don't know too much about recovery from pesticide damage, but I do know that tomatoes will do a great recovery from hard pruning. Our summers are scorchers and the tomato plants get ratty and don't produce fruit anyway. I've found that by pruning the plant(s) back to just 2 or 3 growth spots in July the plants put on new growth and I will have tomatoes all Fall and into our mild winter. It certainly is worth a try.

What kind of herbicide? If you're talking about weed killer, I personally would not eat fruit from a plant that was hit with herbicide.
