Currently old old kitchen has a single light midway between the range and sink

id like to remove that and replace with recessed pot lights.

Should I do two rows?

How far out from counter edge?

anything different in front of fridge as it may extend out more.

There will be two pendants between column and wall behind sink.

I was thinking a row of pot lights directly over sink area counter (Ie halfway from counter edge to wall), then another row about a foot from counter edge on the stove side. On different switches.
