Jalapeno jam recipes

I haven't made any for a couple of years, but would like to this year. I bought a package of certo liquid pectin, and the recipe didn't look familiar to what I'd used before (2 3/4 c finely chopped peppers, 1 1/2 c cider vinegar, 6 1/2 c sugar, 1 pouch pectin). This seems like a lot of sugar:pepper. So I found this recipe on the Kraft website, but wanted to check with the experts for safety: 2 red peppers, seeded, finely chopped (about 1-1/2 cups)

  • 2 green peppers, seeded, finely chopped (about 1-1/2 cups)
  • 10 large jalapeño peppers, seeded, finely chopped (about 1 cup)
  • 1 cup HEINZ Apple Cider Vinegar
  • 1 pkg. SURE-JELL Fruit Pectin
  • 1/2 tsp. butter or margarine
  • 5 cups sugar, measured into separate bowl (See tip.)

So the Kraft recipe is appealing to me because it's 4 c peppers:5 c sugar, but is it safe? Or does anyone have an approved recipe they'd like to share?

    I would trust the Kraft recipe, they are the makers of SureJell and not likely to open themselves up to litigation over unsafe recipes. That's why there is a cup of vinegar in there, to acidify those low acid peppers.

    If you are interested in lowering the amount of sugar in recipes, SureJell also makes a low/no sugar pectin.

    You've given me advice before, and I really appreciate and trust input from the creator of Annie's salsa! I have only been canning for about 5 years, out of necessity because I ran out of freezer space. My parents didn't garden or can, so I'm self-taught (with the help of this forum). Totally addicted!

    I'm flattered, thank you. I LOVE, LOVE, LOVE canning, it's a creative outlet for me, and of course, I also love playing in the dirt, so there's the garden. So, I'm always happy when other people share that interest, then I don't feel so much an oddity. I know more people are canning and gardening now, but still I seem to be one of the few people my age who are interested in it.

    I did have a stepson ask if I would teach he and his wife to make salsa, so now I'm extra excited, someone in the younger generation wants to learn how!

    How exciting to be able to share that with your family! My girls (24 & 20) have absolutely no interest in learning how to garden or preserve, but they do enjoy eating everything I put on the table. I'm definitely an oddity in my family, but at least hubby helps me with the "big" projects. Maybe someday...

    My granddaughter always helped me can and bake, but now she's 15, and does competitive cheerleading and is in driver's education. (sigh) She's too busy now to peel tomatoes and make things for the fair. Funny how they get jobs and sports and boyfriends and then canning with Grandma just isn't as much fun. Neither of my girls (ages 30 and 36) are really interested in canning, although they are (like your family), very interested in eating it, LOL.

    Can away, hopefully some of it will "take" via osmosis or something!

    I'm also somewhat of an oddity in my circle of friends although everyone who visits my house oohs and aahs over my pantry and its contents. Although I do go through cycles of canning like a maniac for a few weeks and then nothing for a few months. I recently had 2 friends say they want me to teach them how to can! I think it is intimidating for the uninitiated, especially to pick it up solo, so I'll see if I can get them hooked with guidance. :) It would be fun to have some buddies to can with.
