Slow Squeezo and tomato sauce questions

I started making Seasoned Tomato Sauce from BBB today. Cored and quartered 45# of maters, simmered in batches 20 min to soften, as per instructions, then run through the Squeezo. It took way longer with my Squeezo than I thought it would. I had to stop to clean the screen 3x. Ended up taking about 3 hr to get them all done!! Surely this isn’t normal????

My Squeezo came with 3 screen sizes. The largest one is too big for tomato seeds so I use the second largest. Just wondering how to speed up the process. I could skin them and push the seeds out first, but then what’s the point of using the food mill if it can’t handle the seeds and skins? 45# is too much to do that way anyway, I think. I wonder what I’m doing wrong....

I have a question about making the sauce too.

I will be cooking it down to reduce by half and then canning it tomorrow.

When I finally got the last of the tomatoes through the mill, I had about 1.5 gallons of juice left in the pot. I strained that with a sieve and put it in separate jars in the fridge. Should I just can that separately as juice or should it be added back in with the rest of the sauce to cook down? It wasn’t clear and watery, but was a thin juice that tasted great.

Thanks for the input!
