Have you looked at specific dog bathing fixtures? Professional dog-wash hand-held sprayer with squeeze trigger

If you look, you will find that there are more expensive ones, up to $215. I did not look at them, but I think they have steel hose. Not sure if their heads are different.

The advantage of using a dog wash sprayer is that the angle is made for the job - spraying animals. So the ergonomics should be better for you. This may be important if you have a very large, furry dog or if you have multiple dogs.

Clearly I am misunderstanding your need. What you are describing (I believe) are found a dime a dozen at Home depot, Lowes, Amazon, etc

Let go of the nozzle and it will turn off. (You may need a 34" X 12" adapter if you are retaining the tub hose... again, lowes, HD, amazon, couple of bucks.

Thank you all for the advice. I did consider a commercial faucet, but all the ones I've seen have been a pull down type and as Kats mentioned, the length wouldn't be ideal.

@Nancy, thank you for the link! I did look at a cheaper version of those, but dismissed them because it didn't look like they would attach to the indoor plumbing. I didn't realize they sold adapters for those to fit sinks. Now I just need to find an adapter to fit the shower. Or, maybe I'll just install a sink faucet there instead of a shower head?? Either way, you've pointed me in the right direction!

@SaltiDawg, no, you weren't really misunderstanding. One of the cheap garden hose sprayers is what I was envisioning, I just didn't think they were an option. I didn't realize they made adapters for them to fit indoor plumbing. I'll blame it on exhaustion, because if I had given it any thought I would have known folks in the 70's/80's needed some type of adapter to fill their water beds. :) Nancy gave me a link for a faucet adapter, so I'll see if it fits the showers too.

A good hardware store or a plumbing shop should have what you need. I used a shower head like this as my hand-held shower head because it was small and easy to hold.

When you get the diverter that you add up by the shower head in your shower, the hose hangs down and does not hit the floor of the bath tub. So this heavy, solid brass one is not going to hit and nick up the tub bottom. It worked great! It was aimed downward, so if I had to bathe a dog, it was aimed in the right direction. If I forgot to switch the water back to come out of the regular shower head, the spray did not go all over, it just went downward.

As for using it to rinse myself, it was great. The Ace Hardware guy had to give me an adapter to use it with the hose, and that added an inch or so of length to the solid brass fitting at the end. So I had a nice length of brass to hold onto or I could simply hold the showerhead in my palm and cup it with my thumb and a couple of fingers and it aimed wherever my hand pointed. The button on the side is the on/off valve, so it is easy to stop the flow of water, as well.

$22, but that button will not turn it off automatically when you drop it. You will have to push the button to close the valve. And it won't spray downward when you drop it like mine did unless you situate it so that the hose is the right height so that it does not reach the floor of your tub.

This is what I plan to do. I don't think I mentioned it in my original post, but this is new construction, so I have to buy a shower fixture anyway. Looks like Nancy has one that is the right price and gives me options for when someone steals my garden hose sprayer to use outside--cause you know they will. :)

Many commercial dog wash/grooming facilities have what you requested. I found them on the internet, they cost ~$500. Restaurants also use them.
