PreHeating for High Heat Cooking w/Induction?

I have read all I can about high heat cooking w/induction, what I'm not clear on is if you can pre-heat a cast iron pan long enough (5-10 min) before the "overheat protection" function kicks in or the cooktop is destroyed/damaged. I'm interested in the 36" Miele Induction Cooktop (KM6375) and when I contacted them they said it would turn off. I do a lot of high heat cooking - stir fries, searing meat, etc. I have a portable induction hob that I cannot heat an empty cast iron pan on - I realize it's not the same thing as a full size cooktop. Are there any induction cooktops that don't have this issue? What have others experiences been in this regard?

    There is no point in heating a highly conductive surface past the point of it arriving at the needed temperature. A 2-3 minute preheat is all that is needed.

    Where your 1500 watt portable fails is in the power to keep it at that heat after adding the ingredients. That’s a different thing all together from preheating. That has to do with thermal mass and power. The larger cold thermal mass is more overwhelming to the temperature of the pan than the ability of the burner to generate heat to compensate for the temperature drop.


    A longer preheat will not solve that issue if the burner itself is underpowered. Which is why a 3500 watt element or above for a searing burner is important.

    jwvideo I agree with everything you said about cast iron. My research hadn't turned up that thread - very helpful, thank you! And thank you for tips. I feel more confident getting induction.

    When I make cornbread using my cat iron skillet, I preheat it in the oven. Far simpler.

    If you preheat the cast iron in the oven is it safe to put it directly on the glass cooktop? I have been putting preheated pans on silicon mats on the induction cooktop since the silicon does not impeded the stovetop cooking but am wondering if that is an unnecessary precaution. It's the sudden exposure to heat that I was worried about, not the heat itself.

    The answer to "is it safe" is ---. it depends.

    Mostly not a problem with induction stovetops, full-size cooktops and the PICs with tough ceramic tops. Schott Ceram, a commonly used top material, is very resistant to heat shock --- supposedly up to 750°F, IIRC. FWIW, I've never had any problems with preheating a CI skillet in a 500°F oven and moving it onto my induction cooktop or onto friends' radiant smoothtop stoves for the actual cooking.

    But, as always, read the owner's guide for your appliance. I know that there are some manufacturers (Viking in particular) whose user guides forbid any use of any cast iron on their electric and induction ranges.

    Be aware that many PICs cheap out on the top surface, using tempered glass tops rather than Ceram. Even supposedly "commercial" models (such as those from Avantco) do this to hold down manufacturing costs. A tempered glass top does have some risk of breaking under the thermal stress of plonking a 500° CI pan on an unheated cooktop surface. The thinner the top, the greater the risk.

    Silicon mats certainly do mitigate risks from thermal shock with induction surfaces, but attention is required to the type of mat. Kaseki here has pointed in some threads to high-temperature mats which can easily handle a 500° CI pan. However, common silicon baking mats, like Silpats, are only rated (IIRC) to about 480°F. There may or may not be a margin of safety above that, but I'd be inclined to limit the oven preheating to around 450° F, myself. That's still plenty hot enough to give a good sear and diminishes the risk of melting the mat.

    Of course, all bets are off for the gonzo ultra-high temp searers. I read somewhere recently a blog where the author was complaining that his pro-style range's infra-red broiler would not heat his cast iron pan over 700°F which he felt was not quite hot enough for his preferred "black and blue" steaks. Anybody into that kind of thing is on his own.

    thanks , very helpful! I lean towards the "thick black charcoal on food may be precancerous" school of thought so no worries of being an ultra high temperature searer here. I happily eat the little bits of black that occur on the lower temp sears. Good warning on the silicon mat tolerances.

    So, Dan, I gotta ask: would you use your induction burners to crank a cast iron pan to 650° to sear ribeye by conductive heat as opposed to searing with radiant heat from a grill, broiler or salamander? :>)

    That's tough to say cause I'm more in the brisket pellet cooker phase with an Instant Pot thrown in. If I were cooking that steak I'd probably go sous vide with searing using a burner. So no to the cast iron pan at high heat.

    I would only add these details re my 3500W Cooktek induction wok hob. The Cooktek's glass is a concave piece of Schott Ceran. The Cooktek supplied wok rests on a stainless steel ring at the top (outer diameter) of the glass. The curvature of the wok matches the curvature of the glass such that the wok maintains a small gap above the Ceran surface over the entire area, independent of wok tilt. This not only minimizes heat transfer to the glass, but protects it from aggressive wok handling.

    Hmmm. I just realized that o-rings of silicone or more exotic materials could be used in the same manner as silicone pads on flat induction wok surfaces, and reduce further the heat transfer back into the cooktop. I'll have to investigate that in the fullness of time.

    Good point, and, in fact, that and variations thereon is what I've been doing recently and those methods have worked well for me.

    For Uesgrl, if you want to try this tip, rather than write out my variations, I'll suggest this link as a good dissertation on one of the variations that does not require vacuum bagging and immersion circulators. .
