I have 7 gallons of wine under airlock with 7 more brewing in the primary fermentation stock pots. My grapes are late to ripen this year. Must be because I didn't trim them this spring. The only thing I put into the wine is grapes except for the bentonite clay I add to clarify the wine. It all settles to the bottom and is completely removed when I rack it. I picked another 10 gallons of grapes yesterday and am waiting to see if more ripen. Looks like I will have to give more bottles away to friends and neighbors.
