I don't have any answers for you specific to your question but after doing some research I settled on the following.

Spray foaming basements is a baaaaaad idea unless you have a bulletproof water management system in place around the exterior of the foundation, meaning you will NEVER experience water penetration of any kind, and you also have a bulletproof sill-seal that acts as a capillary break between your wood sill plate and the concrete foundation, and the sill seal and spray-foam join to form a 100% impenetrable moisture barrier.

It depends on the spacing of your floor joists, but in most cases you will have space for them to shoot in the foam. The wall in this picture has 1" foamular board on the cement wall, with a 2x4 wall framed in front of it, and then the cavity is filled with rock wool batts. As you can see, there is still space between the top plate (the lighter colored wood) and the floor joists (darker wood at the top of the picture), and I think they could still shoot foam in there. However, it would depend on how close the last floor joist is to the rim joist.
