The difficult part is the accurate measuring or templating so that each stone is properly cut. We're a small company so it would be most cost effective for us to get detailed measurements after the pool was shot, then send those to a fabricator to cut and rock face the pieces. Other companies will cut each piece on site, or at least shop fab them in house. Once fabricated, the install is no different from straight coping pieces.

If you're getting this priced out, be 100% certain that you and the contractor are on the same page. I designed a pool area with large, curved, stone steps. The client's contractor thought he could save money by faking the curves with a gazillion 12"x12" pieces (way cheaper) and since the contract didn't specify custom cuts or stone sizes, the client ended up paying more. Make sure the contract language reflects that the coping will be cut to follow the curves/radii of the pool.
