Beet Jam, Jelly or Preserves?

A guest at where I worked was bragging about the fantastic beet jelly his grandmother use to make. Said he'd never found any otherwise and would love to have some. Has anyone ever had it, heard of it or made it? I'd be willing to try making it if I could find an approved recipe or convert another recipe using a vegetable juice.

It could be made just like the various pepper jelly recipes - lots of added acid - usually in the form of bottled lemon juice or vinegar.

The NCHFP instructions use vinegar for the pepper jelly but most of the online recipes I have seen for beet jelly use lemon juice with beets.

Thanks, Dave! I just found the recipe on Genius Kitchen and thought it sounded safe. As soon as I can get to a grocery I'm going to buy some beets and give it a go.
