I would check with your township. In mine you are only allowed to have a fridge and sink in a second kitchen. No stove or oven. They don't want people to turn part of their homes that are zoned single family residential to an illegal apartment.

If this is a temp kitchen I wouldn't worry. You can use an induction cooktop(120v) or two off Amazon. We're sous viding using an Anova here to batch cook for finishing quickly later. Works for chicken thighs, pork butt and brisket.

Think about living without an oven while you renovate but a couple of single induction burners would work for sure and if you must a taster oven.
