Bathroom wall tile help

I'm getting a little ahead of myself, as this phase of the project is a little way off, but hey! the house is painted and the countertops are installed, floors get refinished Thursday, so I feel like we are inching towards this new construction end of the timeline.)

We're planning a walk-in shower with two pony walls the exact dimensions TBD (multiples of 30"?) because of the tile I'd like use on the walls. Which is why I am here.

Here is the tile. It is LARGE. 10 x 30. I wish it were smaller, but it is not.

What is a standard wall pony wall width so I can look for something that co-ordinates as a cap tile along the top of the walls. And I guess for the niches, since, the main tile won't work there either...

Anything else I should consider with a BIG tile like this apart from a lot of math to figure out how to show off as much of these without loads of cuts and buttering the back of the tile to help adhesion?

TIA
