Cat making a weird crunching sound

My cat is about 7years old and we adopted her back in August from a shelter.
So I'm not sure if she has any weird old habits or past health concerns this cold relate to.
She a few months back she began this odd crunching sound. She will sit and tilt he head to the side, some times she will duck it real low and chew on her left side it sounds like she is crunching on like a rock or gravel. It's the worst sound in the world and I can not stand listening to it.
She seems fine e otherwise, unaffected by the chewing or noise. So I went online searching for answers. Most came up unhelpful but that's okay. They all stated it wasn't a big deal and it was a quirk that they just did. Fine fine.
Well this past week it's been getting more frequent and it's mostly while sitting on her box table by my bed.
If she ever wants food or attention she tells. She still yells. She will climb in the way or on us and cry until she gets all the attention she wants or until her food dish is filled.
Is this a problem anyone else has run into? Anything the vet said or recommend it could be?I want to have the right questions to ask when we finally go.
The money and the idea of trying to get her into a carrier have prevented us from going sooner. She will have no part of the carrier. It took them a half a hour to get her into it when we adopted her. (It's not a small crate, has a blanket and she does fine once she's in there but trying to get her in is a fight I don't like to start)
