Butternut squash lost flavor when.......

I baked and got the pulp out of it this spring. Maybe this always happens and I always to get the pulp from all the Waltham butternut squash to freeze much earlier in the winter.

I harvested a lot last fall and baked them in batches, then froze the pulp. It was soooooo sweet and delicious. Today I dealt with the last 2 and they taste pretty bad. Is this deterioration in flavor with age pretty common? I kept these in the house (not a cool basement). Just wondering if this is pretty normal......the longer you wait to process them, the less sweet they are?
