The waltham butternut I stored in my basement kept until early January. The butternuts eaten before that were great. Those eaten last looked ok but the flesh around the seed cavity when cut open was discoloring and noticably different than normal. While ok to eat, the flavor was far better earlier in the season. My basement is basically 62 degrees all winter so not the best for cold storage long term.

I think yours did the same as mine. They just reached the end of their shelf life. Better to have used them earlier in the season or cooked and froze them for longer term storage.

Thanks spartanapples. I had never waited until spring to finish baking and freezing the pulp of the last couple of them, and I'm amazed at how much the flavor deteriorated. Lesson learned! Thanks for your input!
