You can't go wrong.

Don't get black stainless. It's a thin coating that is impossible to restore once inevitably damaged. On the other hand, regular stainless can be buffed out, if you ever feel that it needs that.

Some of the coated appliances look nice too. But I recommend shopping for the most appropriate model first, and then thinking about finishes. There are so many different appliances and quality differs a lot. If you restrict yourself to a particular unusual finish, you might not be able to select from the same set of high-quality appliances.

Also, paneling is always an option for things like dishwasher and refrigerator.

Go with stainless and spend the ‘little bit extra’ instead on upgrading your lower cabinets to drawer units

I am in the process of appliance shopping too. While the new black trend is a neat option, I would not consider it as one never knows how long an appliances would last these days. If one appliance needs to be replaced, chances are you may consider other brands and stainless steel is still the norm. Totally agree that the "little bit extra" can be spent on other upgrades.

Update, sorry I forgot to post these earlier. I went with the Slate and I couldn't be happier.
