I would have three recessed lights put in instead. You need good bright light in that area.

Or something cute in the hallway area and a large, bright, daylight fixture in the laundry area, where you need to be able to see colors and stains, etc...

As to it being "hard" no, you can hire someone, lots of electricians offer bundle packages, 6 cans for x amount installed. Leave that part to the pros its worth it when it comes to hole cutting and wiring flinging.

To add on to Lawrence's answer...in addition, they have LED recessed that don't need a junction box and only about 3" vertical clearance. So you can have LED recessed lights in just about any place you can access, to run a wire. Put one in using your existing junction box and then add on a couple more wherever you like.
