Advice on backsplash (coverage) behind range hood.

We're set to have our kitchen renovated the first week of October. We're kicking ourselves on the fact we did not plan for our cabinets to go all the way to the 9ft ceiling, mainly because we have crown molding in our kitchen. I have attached a photo of our current kitchen.




The new kitchen would look like this:




So the dilemma is how to arrange for the back-splash. I haven't seen too many similar layouts with respect to having the ceiling crown molding.


Essentially, what we're trying to figure out is how would we handle the crown molding, back splash and the range hood? Would the crown wrap the hood, or would it butt up against the sides? Or would it only butt up to the backsplash if we go to the ceiling?


Here is a photo that meets up with the hood, but we're not fond of this (plus no back splash).




Here is another photo (without crown), but they have the backsplash going to the ceiling.




We're not a fan of how the tile seems to lose it's line when it hits the crown of the cabinet.


We like the next one, a bit more, however they do not run the back splash up to the ceiling:





So confused at what to do here. Any ideas?
