Carla, I'm not going to be any help, I've had the same experience as you have. Every corn "stripper" I've tried either creates an enormous mess or is difficult to use, or doesn't work well. I just use a deep bowl and a sharp knife.

My husband and I froze 59 quarts of corn this year and we used knives, nothing else worked well at all.

I always do most of my corn processing work outside on the back porch. Blanching and putting the corn in containers is done in the kitchen, but everything else is done outside where I can clean up with a water hose.

I use a mandolin , easy and quick with corn , fingers are well away from blade.

I use an electric knife for cutting corn off the cob. It works well and is pretty fast with little mess. I usually only do about 6 dozen ears a year though.

I bought the Oxo corn prep peeler. That's what it's called. Like a Y veggie peeler with a curved blade. I watched videos of people online doing reviews that didn't like it. But generally, they were using corn that had no stalk attached. They couldn't grab the ear itself well enough to make it work. So when I harvested corn this summer, I left a long stalk attached so I could use it. I assume the husk could be held, but it's not as sturdy as the stalk itself.

I did a dozen every 30 minutes for a batch I brought in. That included husking, silking, measuring into a container, and removal of the "trash". The handle is big enough to grab, in true Oxo fashion. It took a few ears to really get the hang of it, but I like it. It does not really splatter much. To the contrary, the kernels will stay laying on the ear most of the time. Or fall right off, not fly all over.

I have tried an electric knife, but my hand gets sore holding that trigger. I tried both the thumb trigger and the index finger trigger types.
